This dish originated in southern regions of Taiwan, and it is commonly sold at night markets. Back in the days, both tomatoes and mangoes were imported fruits. The locals didn't like the taste of the tomato and mangoes when they first tried them, so they used ginger (known for getting rid of "weird" taste) to complement the fruits. The tasty tomato & ginger dish was born!
